How does AI read a supplier invoice and get it into bookkeeping?

It takes the invoice from email, a scan or a photo, reads the supplier, number, date, net and gross amounts, VAT rate and line items, then checks them against your order and delivery note. Why this is more than text recognition

Character recognition tells you what letters are on the page. The three-way check

The invoice is compared to what you ordered and what actually arrived. Quantity, unit price and agreed discount all have to line up.
